Method
Prepared ingredients save time, while a brief sauté with garlic brings homemade flavor. Loosen kashk with warm water and never boil it. Stir some fried onion into the dip and reserve the rest for the top.

Warm the eggplant in a pan and mash it lightly.

Add garlic and half the fried onion; cook 3 minutes.

Bloom the mint in a spoon of oil for only 20 seconds.

Thin the kashk with warm water and stir half into the eggplant.

Warm gently for 4 minutes without boiling.

Finish with remaining kashk, onion, mint and walnuts.
