Method
The mixture should become tacky through kneading and chilling rather than excess flour. Seal the plum fully inside each ball. Keep the sauce at a gentle simmer so the koofteh stay intact.

Knead meat, herbs, rice, onion, egg and walnuts for 6 minutes.

Chill the mixture for 30 minutes.

Divide into 8 portions and seal one plum inside each.

Bring tomato sauce to a gentle simmer in a wide pot.

Add koofteh with space between them and cook uncovered for 15 minutes.

Partly cover and simmer gently for another 35 minutes.
